Egg-Potato Curry
Fried potato and boiled & fried eggs cooked in thick spicy gravy - Yummy.
My recipe is as follows :
Ingredients :
Potato - 2 medium
Eggs - 2
Fenugreek seeds (methi dana)- 1/2 tea spoon
Tomato - 1 medium
Garam Masala powder - 1 tea spoon
turmeric powder - 1/2 tea spoon
red chilli powder - 1/2 tea spoon
coriander powder (dhania powder) - 1 tea spoon
green coriander leaves (hari dhania) - 2 small bunch
ginger garlic paste - 1 tea spoon
salt - to taste
Recipe
Peel, cut and soak potatos in water for 15 mins (optional)
hard boil eggs and peel them
deep fry boiled eggs and potatos in sunflower oil.
keep aside fried eggs and potatos.
heat oil in a pan
add fenugreek seed till they sputter.
add garam masala powder, turmeric powder, chilli powder, coriander powder and salt.
add ginger garlic paste
fry spices till oil separates
add tomatoes and fry for 2 mins
add a cup of water till it boils
add potatos and eggs
and cook on low flame for 2-3 mins.
garnish with coriander and serve hot with chapatis or naans.
